Ingredients

  • 12 eggs, separated
  • 1/4 cup orange juice
  • 1/2 lemon rind, grated
  • 1 1/2 cups sugar
  • 1 tablespoon oil
  • 2 tablespoons boiling water
  • 1/2 cup cake meal
  • 1/4 cup potato starch
  • 1 cup chopped nuts

Instructions

  1. Cream sugar and egg yolks together until light yellow.
  2. Add orange juice, grated lemon rind, oil, and boiling water; mix well.
  3. Mix cake meal and potato starch together and add to the wet mixture.
  4. In a separate clean bowl, beat egg whites until stiff peaks form.
  5. Do not overbeat the egg whites.
  6. Gently fold the beaten egg whites into the batter until well combined, without beating.
