A moist, flavorful date-nut bread with sweet dates and crunchy nuts, perfect for breakfast, tea time, or as a wholesome snack for nut lovers and bread enthusiasts.

Ingredients

  • 1 Tbsp. shortening
  • 2 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 3 c. flour, sifted
  • 1 1/2 c. boiling water from dates
  • 2 c. chopped dates (8 oz.)
  • 1 c. chopped nuts
  • 2 tsp. soda

Instructions

  1. Cook the chopped dates in boiling water, covered, until partially soft, about 15 minutes.
  2. Drain the dates, reserving 1 1/2 cups of the boiling water for the batter.
  3. Mix shortening, sugar, egg, vanilla, and salt together using a whisk.
  4. Add sifted flour to the mixture alternately with the reserved boiling water from the dates, mixing well after each addition.
  5. Dissolve the soda in 1 teaspoon of water and stir into the batter.
  6. Fold in the chopped dates and nuts.
  7. Line the bottoms of greased loaf pans with waxed paper and pour in the batter.
  8. Bake in a preheated oven at 350°F (175°C) for 1 hour, or until a toothpick inserted in the center comes out clean.
