Pat Ackerman'S Date-Nut Bread

- Cook the chopped dates in boiling water, covered, until partially soft, about 15 minutes.
- Drain the dates, reserving 1 1/2 cups of the boiling water for the batter.
- Mix shortening, sugar, egg, vanilla, and salt together using a whisk.
- Add sifted flour to the mixture alternately with the reserved boiling water from the dates, mixing well after each addition.
- Dissolve the soda in 1 teaspoon of water and stir into the batter.
- Fold in the chopped dates and nuts.
- Line the bottoms of greased loaf pans with waxed paper and pour in the batter.
- Bake in a preheated oven at 350°F (175°C) for 1 hour, or until a toothpick inserted in the center comes out clean.
