- Combine whole wheat flour, wheat bran, sugar, and baking powder in a bowl and stir to mix well; set aside.
- Drain the can of peaches, reserving the juice, and puree the peaches in a blender.
- Add the reserved peach juice to the pureed peaches to make 1 1/2 cups of peach mixture.
- Add the peach puree and egg whites to the flour mixture and stir until the dry ingredients are moist.
- Fold in dried peaches or pecans if desired.
- Coat muffin cups with cooking spray or Pam and fill each cup three-quarters full with batter.
- Bake at 350°F (175°C) for 15 to 17 minutes until golden and a toothpick inserted in the center comes out clean.
- Allow muffins to cool slightly before serving.
