Ingredients

  • 1 1/2 cups whole wheat flour
  • 2/3 cup wheat bran
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 (1 lb.) can peaches packed in juice
  • 2 egg whites

Instructions

  1. Combine whole wheat flour, wheat bran, sugar, and baking powder in a bowl and stir to mix well; set aside.
  2. Drain the can of peaches, reserving the juice, and puree the peaches in a blender.
  3. Add the reserved peach juice to the pureed peaches to make 1 1/2 cups of peach mixture.
  4. Add the peach puree and egg whites to the flour mixture and stir until the dry ingredients are moist.
  5. Fold in dried peaches or pecans if desired.
  6. Coat muffin cups with cooking spray or Pam and fill each cup three-quarters full with batter.
  7. Bake at 350°F (175°C) for 15 to 17 minutes until golden and a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool slightly before serving.
