- Preheat oven to 350°F (175°C).
- Coat a 9-inch spring-form pan with nonstick cooking spray.
- In a bowl, combine graham cracker crumbs and 3/4 cup of peanut butter.
- Press the mixture onto the bottom and three-quarters up the sides of the prepared pan; freeze for 15 minutes.
- In a large bowl, beat the cream cheese until smooth.
- Add sour cream, remaining peanut butter, honey, sugar, and ground cinnamon; mix well.
- Beat in eggs one at a time until fully incorporated.
- Stir in all-purpose flour until just combined.
- Pour the filling into the crust-lined pan.
- Bake in the preheated oven for approximately 60 minutes, or until the center is set.
- Remove from oven and cool to room temperature, then refrigerate for at least 4 hours before serving.
