Ingredients

  • 3 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 eggs
  • 3 cups sugar
  • 1 cup cooking oil
  • 2 cups finely grated carrots
  • 1 can (9 oz.) crushed pineapple, drained
  • 2 teaspoons vanilla
  • 1 cup chopped peanuts

Instructions

  1. Sift together the flour, soda, salt, and cinnamon.
  2. Place eggs and sugar in a mixer bowl.
  3. Beat at medium speed until mixed.
  4. Gradually beat in oil, a small amount at a time.
  5. Stir in the flour mixture, grated carrots, crushed pineapple, vanilla, and chopped peanuts.
  6. Pour batter into two greased loaf pans.
  7. Bake at 350°F (175°C) for 60 minutes.
