Ingredients

  • 1 large egg white
  • 1 Tbsp Dijon mustard
  • 1/3 cup finely chopped pecans
  • 1/4 cup fine dry bread crumbs
  • 1 small clove garlic, crushed
  • 2 Tbsp salad oil
  • 4 (4 oz) loin lamb chops, 1-inch thick and trimmed
  • Fruited Rice Pilaf

Instructions

  1. In a shallow bowl, lightly beat the egg white with a fork.
  2. Add the Dijon mustard to the egg white and beat until blended. Set aside.
  3. On waxed paper, combine the finely chopped pecans, bread crumbs, and crushed garlic. Set aside.
  4. Brush each lamb chop with the mustard mixture.
  5. Press each chop into the pecan mixture to coat evenly.
  6. Heat salad oil in a skillet over medium-high heat.
  7. Cook the lamb chops for about 4 minutes per side or until desired doneness.
  8. Serve the lamb chops with Fruited Rice Pilaf.
