Ingredients

  • 3 cups hot cooked rice
  • 1 pound lean beef round steak
  • 1 tablespoon paprika
  • 2 tablespoons butter or margarine
  • 2 cloves garlic
  • 1 1/2 cups beef broth
  • 1 cup sliced green onions
  • 2 green peppers
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 2 large fresh tomatoes

Instructions

  1. While rice is cooking, pound steak to 1/4-inch thick and cut into 1/4-inch strips.
  2. Sprinkle meat with paprika and allow to stand while preparing other ingredients.
  3. Using a large skillet, brown meat in butter.
  4. Add garlic and beef broth.
  5. Cover and simmer for 30 minutes.
  6. Stir in green onions and green pepper strips.
  7. Cover and cook for an additional 5 minutes.
  8. Blend cornstarch, water, and soy sauce.
  9. Stir the mixture into the meat and vegetable mixture.
  10. Cook, stirring, until thickened, about 2 minutes.
  11. Add tomatoes and stir gently.
  12. Serve over beds of fluffy rice.
