Ingredients

  • 1 lb. bulk sausage
  • 1/2 c. chopped celery
  • 1 (16 oz.) can tomatoes
  • 1 tsp. sugar
  • 10 oz. lasagna noodles
  • 2 c. Ricotta or cream-style cottage cheese
  • 2 Tbsp. snipped parsley
  • 1/2 c. chopped onion
  • 1/2 c. chopped carrot
  • 1 (6 oz.) can tomato paste
  • 1/2 tsp. oregano
  • 2 beaten eggs
  • 1/2 c. grated Parmesan
  • 16 oz. Mozzarella, sliced

Instructions

  1. In a large skillet, cook sausage, chopped onion, chopped celery, and chopped carrot until the meat is lightly browned.
  2. Drain off excess fat.
  3. Stir in canned tomatoes, tomato paste, sugar, oregano, 1 teaspoon salt, and 1/4 teaspoon pepper; simmer, uncovered, for 20 minutes, stirring occasionally.
