Ingredients

  • 1 lb. frozen ocean perch fillets
  • 1 (10 oz.) package frozen chopped spinach
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • dash of nutmeg
  • 1/4 cup melted fat or oil
  • 1 1/2 cups milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Worcestershire sauce
  • paprika

Instructions

  1. Thaw and skin the perch fillets.
  2. Cook the chopped spinach according to package directions and drain thoroughly.
  3. Blend the flour, salt, pepper, and nutmeg into the melted fat or oil in a saucepan.
  4. Gradually add the milk, cooking until the mixture is thick and smooth, stirring constantly.
  5. Add the grated Parmesan cheese and Worcestershire sauce, stirring until blended.
  6. Arrange half of the fillets in a casserole dish and layer with the spinach and cheese mixture.
  7. Repeat with remaining fillets and spinach mixture.
  8. Bake in a preheated oven at 350°F (175°C) for 1 hour.
