Ingredients

  • 8 oz. linguine or spaghetti
  • 10 oz. bag spinach
  • 4 oz. thinly sliced prosciutto
  • 2 large carrots
  • 2 medium yellow peppers
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup salad oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon pepper

Instructions

  1. Prepare spaghetti or linguine as label directs; drain and set aside.
  2. Wash and chop the spinach.
  3. Thinly slice the prosciutto.
  4. Peel and grate the carrots.
  5. Slice the yellow peppers into strips.
  6. In a large bowl, combine the cooked pasta, spinach, prosciutto, carrots, and peppers.
  7. In a small bowl, whisk together salad oil, red wine vinegar, and pepper.
  8. Pour the dressing over the salad and toss gently to combine.
  9. Sprinkle grated Parmesan cheese on top before serving.
