Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup blended persimmon pulp
  • 1 tablespoon baking soda
  • 2 cups sifted cake flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon powdered clove
  • 1/4 teaspoon salt
  • 1 teaspoon grated lemon rind
  • 1 cup chopped dates

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. Cream the butter until smooth.
  3. Beat in the sugar until well combined.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir baking soda into the blended persimmon pulp and add to the creamed mixture.
  6. In a separate bowl, sift together the cake flour, cinnamon, nutmeg, powdered clove, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing well.
  8. Stir in the grated lemon rind, chopped dates, and nuts.
  9. Pour the batter into the prepared baking pan, spreading evenly.
  10. Bake for 30 to 45 minutes or until a toothpick inserted in the center comes out clean.
  11. Remove from oven and turn out onto a rack to cool.
