Ingredients

  • 1 cup persimmon pulp
  • 1 cup brown sugar
  • 2 tablespoons oil
  • 1 egg
  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup raisins
  • 1 cup nuts

Instructions

  1. Mix persimmon pulp, brown sugar, oil, and egg well.
  2. Dust raisins and nuts with a little flour; add all dry ingredients, raisins, and nuts to the first mixture.
  3. Add vanilla and mix until combined.
  4. Pour batter into a greased and floured 9 x 5-inch loaf pan.
  5. Bake at 350°F (175°C) for 45 minutes to 1 hour, until a toothpick inserted into the center comes out clean.
