Ingredients

  • 1 c. persimmon pulp
  • 1 c. sugar
  • 1 egg
  • 1/2 c. milk
  • 1 c. flour
  • 1/4 tsp. salt
  • 2 tsp. soda
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 Tbsp. melted butter or margarine
  • 1 c. chopped walnuts
  • Hard Sauce

Instructions

  1. Mix persimmon pulp, sugar, egg, and milk in a bowl.
  2. Sift together flour, salt, soda, cinnamon, and nutmeg in a separate bowl.
  3. Add melted butter and chopped walnuts to the flour mixture and combine.
  4. Combine the persimmon mixture with the flour mixture until well blended.
  5. Pour the batter into a well-greased mold with a lid. If no lid is available, cover tightly with foil.
  6. Place the mold on a rack inside a kettle. Fill the kettle with water halfway up the mold.
  7. Cover the kettle and steam for 2 hours.
  8. Unmold the pudding onto a serving platter.
  9. Flame with warmed brandy if desired, and serve with Hard Sauce.
