Ingredients

  • 3 1/3 cups cake flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups chopped ripe bananas
  • 1 cup chopped pecans
  • 1 1/2 teaspoons vanilla
  • 1 (8 oz.) can crushed pineapple (undrained)
  • Cream cheese frosting with 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F. Grease and flour three round cake pans.
  2. Mix flour, sugar, baking soda, salt, and cinnamon in a large bowl.
  3. Add vegetable oil and eggs. Stir until all dry ingredients are moistened; do not beat.
  4. Stir in chopped bananas, chopped pecans, vanilla, and crushed pineapple.
  5. Divide batter evenly among the prepared pans.
  6. Bake for 25 to 30 minutes.
  7. Cool for 10 minutes, then remove from pans and cool completely.
  8. Frost with cream cheese frosting mixed with chopped pecans.
