Pinana Cake

Ingredients
- 3 1/3 cups cake flour ⓘ
- 2 cups sugar ⓘ
- 1 teaspoon baking soda ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon cinnamon ⓘ
- 1 cup vegetable oil ⓘ
- 3 eggs ⓘ
- 2 cups chopped ripe bananas ⓘ
- 1 cup chopped pecans ⓘ
- 1 1/2 teaspoons vanilla ⓘ
- 1 (8 oz.) can crushed pineapple (undrained) ⓘ
- Cream cheese frosting with 1/2 cup chopped pecans ⓘ
Instructions
- Preheat oven to 350°F. Grease and flour three round cake pans.
- Mix flour, sugar, baking soda, salt, and cinnamon in a large bowl.
- Add vegetable oil and eggs. Stir until all dry ingredients are moistened; do not beat.
- Stir in chopped bananas, chopped pecans, vanilla, and crushed pineapple.
- Divide batter evenly among the prepared pans.
- Bake for 25 to 30 minutes.
- Cool for 10 minutes, then remove from pans and cool completely.
- Frost with cream cheese frosting mixed with chopped pecans.
