Ingredients

  • 2 cups sifted flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 (8 1/4 oz.) can crushed pineapple
  • 2 tablespoons melted butter
  • 1 egg beaten
  • 1/2 cup chopped pecans
  • 1 1/2 cups coarsely chopped cranberries

Instructions

  1. Sift together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Discard 2 tablespoons of pineapple syrup from the can and mix the remaining syrup with the crushed pineapple, melted butter, and beaten egg.
  3. Stir the pineapple mixture into the dry ingredients until just moistened.
  4. Fold in the chopped pecans and cranberries until evenly distributed.
  5. Pour batter into a greased baking pan and bake at 350°F (175°C) for about 50 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool before slicing and serving.
