Ingredients

  • 1/2 cup finely chopped celery
  • 2 tablespoons minced onion
  • 1/2 cup margarine
  • 1 package (8 oz.) seasoned stuffing mix
  • 1 cup coarsely chopped cranberries
  • 2 (8 oz.) cans crushed pineapple in heavy syrup, undrained
  • 1 (8 1/4 oz.) can water chestnuts, drained and chopped
  • 2 teaspoons ground sage
  • 1/2 to 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 350°F and lightly grease a 2-quart casserole dish.
  2. In a small skillet, cook and stir the celery and onion in margarine for 4 to 5 minutes until tender.
  3. In a large mixing bowl, combine the cooked celery and onion, seasoned stuffing mix, cranberries, crushed pineapple with syrup, chopped water chestnuts, ground sage, salt, and pepper.
  4. Transfer the mixture to the prepared casserole dish.
  5. Bake uncovered for approximately 15 minutes until heated through and slightly browned on top.
