Ingredients

  • 3/4 cup oil
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 teaspoons baking soda
  • 1/2 teaspoon cinnamon
  • 2 cups flour
  • 1 cup crushed pineapple
  • 1 cup coconut
  • 1 cup grated pecans
  • 2 cups finely grated carrots

Instructions

  1. Beat oil and sugar together until well combined.
  2. Add eggs one at a time, beating after each addition.
  3. Mix dry ingredients and gradually add to the egg mixture.
  4. Fold in crushed pineapple, coconut, grated carrots, and pecans with a wooden spoon.
  5. Pour the batter into a greased 9 x 13-inch pan.
  6. Bake at 350°F (175°C) for 35 to 45 minutes, until a toothpick inserted in the center comes out clean.
