Ingredients

  • 3 cups cooked rice
  • ¾ cup chopped onion
  • ¼ cup chopped parsley
  • 1 (4 oz.) can mushrooms
  • ¾ cup chopped celery
  • 1½ cups cooked chicken, finely chopped
  • ½ pound pork sausage, cooked and crumbled
  • 1 cup corn bread crumbs
  • 2 eggs, slightly beaten
  • 1¼ cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Combine all ingredients and mix well.
  2. Turn into a lightly greased 1½-quart casserole.
  3. Cover and bake at 350°F for 30 minutes.
  4. Remove from oven, cover, and continue baking for 15 minutes.
  5. Serve with roast chicken, turkey, or Cornish hen.
