Ingredients

  • 1/2 cup chopped walnuts
  • 1/2 cup canola oil
  • 1/2 cup buttermilk
  • 1 1/3 cups sugar
  • 4 egg whites
  • 2 (6 oz.) jars junior plum baby food
  • 1/2 teaspoon red food coloring (optional)
  • 2 cups unbleached all-purpose flour
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup powdered sugar
  • 4 teaspoons freshly squeezed lemon juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Toast walnuts on a baking sheet in the preheated oven for 8 to 10 minutes, or until golden brown. Watch carefully to prevent burning. Set aside.
  3. In a mixing bowl, combine canola oil, buttermilk, sugar, and egg whites until well blended.
  4. Stir in the jars of plum baby food and red food coloring if using.
  5. In a separate bowl, whisk together flour, ground cloves, ground cinnamon, grated nutmeg, salt, and baking soda.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Fold in the toasted walnuts.
  8. Pour batter into a greased loaf pan and bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Mix powdered sugar with lemon juice to make the glaze.
  11. Drizzle the glaze over the cooled bread before serving.
