Polish Barley Soup

A hearty Polish barley soup featuring tender pearl barley, fresh vegetables, and a creamy sour cream finish, perfect for comforting family meals or cold days.

Ingredients

  • 3/4 cup pearl barley
  • 4 teaspoons sour cream
  • 1 1/2 large onion, chopped
  • 8 cups soup stock
  • 1/2 cup butter or olive oil
  • 2 carrots, diced
  • 1 turnip, diced
  • 1 leek, chopped
  • 1/2 cup chopped celery
  • 2/3 cup mushrooms

Instructions

  1. Simmer pearl barley in 1 1/2 cups of stock until tender.
  2. Gradually add butter or olive oil while stirring.
  3. Boil chopped vegetables in the remaining stock until tender.
  4. Add the cooked barley to the vegetables and season to taste.
  5. Add sour cream just before serving and stir well.
