Ingredients

  • 1/2 cup shortening
  • 2 egg yolks
  • 1 cup sugar
  • 1 pound honey
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon ginger
  • 2 teaspoons baking soda
  • 1 teaspoon allspice
  • 1 cup coffee
  • 2 eggs whites

Instructions

  1. Cream shortening and sugar together.
  2. Add egg yolks, whole egg, and honey; mix well.
  3. Combine dry ingredients: flour, salt, ginger, baking soda, allspice.
  4. Gradually add dry ingredients and coffee to the mixture, mixing until well combined.
  5. Gently fold in beaten egg whites.
  6. Pour batter into a well-greased tube pan.
  7. Bake in a 350°F (175°C) oven for about 50 minutes or until a toothpick inserted in the center comes out clean.
