Ingredients

  • 4 loin chops
  • salt and pepper
  • 2 tsp olive oil
  • 1/3 c sliced shallots
  • 1/2 c port wine
  • 1/3 c chicken broth
  • pinch of thyme
  • 1/4 c dried cherries
  • 1 Tbsp chopped parsley

Instructions

  1. Sprinkle pork chops lightly with salt and pepper.
  2. Heat olive oil in a large skillet over high heat.
  3. Cook pork chops for 4 to 5 minutes on each side until browned. Transfer to a plate and cover to keep warm.
  4. In the same skillet, add shallots and thyme and cook for 1 minute.
  5. Add port wine, chicken broth, and dried cherries to the skillet.
  6. Bring the mixture to a boil and cook until reduced by half, about 3 minutes.
  7. Return the pork chops to the skillet and cook until heated through.
  8. Sprinkle with chopped parsley before serving.
