Ingredients

  • 3 cans pinto beans
  • 1 large red onion
  • 1 red bell pepper
  • 10 to 15 large mushrooms
  • 3 to 4 garlic cloves
  • 3 linguica
  • 2 lb. ground sirloin
  • 1 large can chunk pineapple
  • 1 large can tomato sauce
  • 1 cup brown sugar
  • 2 tablespoons red wine garlic vinegar
  • 2 teaspoons paprika
  • 1 cup Parmesan cheese
  • 1/2 can beer
  • 2 tablespoons mustard
  • 2 cups catsup

Instructions

  1. Slice and sauté linguica in a large skillet.
  2. Add ground sirloin to the skillet and cook until browned.
  3. Pour off excess fat from the meat mixture.
  4. Sauté chopped onion, sliced mushrooms, chopped bell pepper, and minced garlic in the skillet.
  5. Add the sautéed vegetables to the meat and let simmer together.
  6. Season with salt and pepper to taste.
  7. In a large slow cooker or stew pot, combine all ingredients including beans, pineapple, tomato sauce, brown sugar, red wine garlic vinegar, paprika, Parmesan cheese, beer, mustard, and catsup.
  8. Simmer the mixture for 2 to 3 hours.
  9. Add 5 to 6 slices of bacon during the last hour of cooking.
