Ingredients

  • 3 to 4 lb. pot roast
  • 2 Tbsp. oil
  • 1 large onion, sliced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. leaf basil or Italian seasoning
  • 1/2 tsp. celery seed
  • 1 clove garlic, minced
  • 1 c. tomato sauce
  • 1 c. Burgundy or dry red wine
  • 2 Tbsp. flour
  • 1/2 c. water

Instructions

  1. Heat oil in a large skillet or Dutch oven over medium-high heat.
  2. Brown the pot roast on all sides, then remove and set aside.
  3. In the same pan, add sliced onion and cook until softened.
  4. Add minced garlic, salt, pepper, basil or Italian seasoning, and celery seed if using; cook for 1 minute.
  5. Stir in tomato sauce and red wine, scraping up any browned bits from the bottom.
  6. Return the pot roast to the pan, cover, and simmer on low heat for about 3 hours or until the meat is tender.
  7. Mix flour with water to make a slurry, then stir into the sauce to thicken.
  8. Cook for an additional 10 minutes, then serve hot.
