Ingredients

  • 8 oz. mushrooms, sliced
  • 1 1/2 c. mayonnaise dressing
  • 2 c. chopped cooked turkey or chicken
  • 10 oz. frozen mixed vegetables, thawed and drained
  • 1/4 c. chopped onion
  • 1/4 c. flour
  • 1 1/4 c. milk
  • 1 tsp. dried basil leaves
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 c. shredded Cheddar cheese

Instructions

  1. Cook mushrooms and chopped onion in 2 tablespoons mayonnaise dressing over medium-high heat.
  2. Add flour and seasonings (dried basil, salt, and pepper), stirring well.
  3. Gradually add milk, stirring constantly until the mixture thickens.
  4. Stir in 1 cup mayonnaise dressing, cooked turkey or chicken, thawed mixed vegetables, and 1 cup shredded Cheddar cheese.
  5. Cook for 5 minutes.
  6. Spoon the mixture into a 1 1/2-quart casserole dish.
  7. Spread hot mashed potatoes evenly over the filling.
  8. Bake at 375°F (190°C) for about 20 minutes or until heated through and golden on top.
