Ingredients

  • 1 to 2 (1 1/2 cups) potatoes, grated
  • 1/2 cup onion, grated
  • 1 egg or egg substitute
  • 1/2 cup milk
  • 1 teaspoon parsley
  • 1/4 teaspoon paprika
  • 1 teaspoon dry mustard
  • dash of pepper
  • 2 ounces shredded sharp cheese

Instructions

  1. Rub a small amount of margarine over the bottom and sides of an 8-inch glass pie plate.
  2. Combine grated potatoes and onion; pat into the pie plate to form a crust.
  3. Microwave on High for 4 minutes.
  4. In a bowl, beat the egg or egg substitute with milk, parsley, paprika, dry mustard, and pepper.
  5. Pour the egg mixture over the potatoes in the pie plate.
  6. Sprinkle shredded sharp cheese over the top of the quiche.
  7. Microwave at Medium-high for 7 minutes, or until a knife inserted in the center comes out clean.
  8. Let stand for 5 minutes before cutting and serving.
