Ingredients

  • 1 package corn bread stuffing mix
  • 1 stick butter
  • 1 cup chicken broth
  • 2 1/2 to 3 cups diced chicken
  • 1/2 cup onion
  • 2 eggs
  • 1/4 cup onion tops or chives
  • 1/2 cup celery
  • 1/2 cup mayonnaise

Instructions

  1. Mix the corn bread stuffing, chicken broth, and butter together.
  2. Pat the mixture down in a 12 x 8-inch casserole dish.
  3. In a bowl, combine diced chicken, chopped onion, chopped celery, mayonnaise, and salt.
  4. In a separate bowl, beat 2 eggs with 1 1/2 cups of milk.
  5. Pour the egg mixture evenly over the chicken mixture in the casserole.
  6. Cover the casserole with foil and marinate overnight in the refrigerator.
  7. One hour before serving, spread a can of cream of mushroom soup over the top.
  8. Bake at 350°F (175°C) for 40 minutes.
  9. Sprinkle grated cheese over the top and bake for an additional 10 minutes.
  10. Serve hot and enjoy.
