Ingredients

  • 4 None large potatoes, peeled, cut into 1/3 inch thick French fries, rinsed, patted dry
  • None None vegetable oil, for frying
  • None None Feta Cream
  • 3.5 oz feta cheese, slightly softened
  • 1/2 cup heavy cream
  • -1 None Gravy
  • 1 tbsp oil
  • 1/2 None onion, finely sliced
  • 1 tbsp flour
  • 2 cups beef stock
  • 1 tbsp malt vinegar
  • 1 tbsp Worcestershire sauce
  • -1 None To Serve
  • 10 None white bread rolls or buns

Instructions

  1. Fill a large, deep saucepan with oil and place over medium heat. Working in batches, par-cook French fries until just cooked but still pale. Remove with a slotted spoon and drain on paper towels. Set aside while you make the feta cream and gravy.
  2. To make the feta cream, combine feta and cream in a food processor. Process until blended and smooth. Transfer to a serving container.
  3. To make the gravy, heat oil over medium heat. Cook onion until lightly caramelized. Add flour and stir gently to combine. Add stock. Simmer over low heat, stirring occasionally, until thickened. Stir in vinegar and Worcestershire sauce. Season.
  4. Meanwhile, to finish the French fries, heat oil to 350°F. Working in batches, cook French fries until crisp and golden. Sprinkle with sea salt.
  5. To serve, fill buns with hot French fries. Dot with feta cream and drizzle with hot gravy. Finish with Parmesan, if desired.
