Ingredients

  • pastry for a double crust pie
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoons ground cinnamon
  • dash salt
  • 10 caramels (cut in half)
  • 1/2 cup chopped pecans
  • 1/4 cup butter or margarine, melted
  • 3 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
  • 6 cups thinly sliced peeled cooking apples
  • half and half, light cream or milk

Instructions

  1. Prepare the pastry crust and roll out half of the dough into a 12-inch circle on a lightly floured surface.
  2. Fit the rolled-out dough into a 9-inch pie plate, trimming any excess to align with the rim.
  3. Roll out the remaining dough for the top crust and set aside.
  4. Mix the brown sugar, all-purpose flour, sugar, ground cinnamon, and salt in a bowl.
  5. Spread the mixture over the sliced peeled apples in the pie plate.
  6. Place the halved caramels and chopped pecans evenly over the apple filling.
  7. Drizzle the melted butter and lemon juice over the top.
  8. Cover with the second crust, seal the edges, and cut small slits to vent.
  9. Bake in a preheated oven at 375°F (190°C) for approximately 45 minutes or until golden brown.
  10. Allow to cool slightly before serving with light cream or milk.
