Ingredients

  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 c. Wesson oil
  • 4 large eggs
  • 3 c. sugar
  • 1 1/2 tsp. salt
  • 1 small can pumpkin
  • 2/3 c. water
  • 3 c. flour
  • 2 tsp. baking soda
  • 3/4 c. chopped nuts
  • 3 coffee cans, greased and floured

Instructions

  1. Mix nutmeg, cinnamon, Wesson oil, sugar, eggs, and salt until thoroughly combined.
  2. Add the remaining ingredients: pumpkin, water, flour, baking soda, and chopped nuts. Mix well.
  3. Pour the batter into three greased and floured coffee cans until each is approximately 3/4 full.
  4. Bake at 350°F (175°C) for 1 hour.
  5. Cool the cans for 10 minutes, then turn out the loaves to cool completely.
