Ingredients

  • 3 cups pumpkin
  • 2 teaspoons vanilla
  • 1 stick melted oleo
  • 1 cup milk
  • 1 cup coconut
  • 1½ cups sugar
  • 4 eggs
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup chopped nuts
  • 1 cup brown sugar
  • 1 c. brown sugar

Instructions

  1. Beat the first nine ingredients until smooth.
  2. Pour the mixture into a buttered rectangular Pyrex dish.
  3. Combine chopped nuts, brown sugar, cinnamon, and nutmeg to make the topping.
  4. Sprinkle the topping evenly over the pumpkin mixture.
  5. Bake at 350°F for 20 to 30 minutes until set and golden.
