Ingredients

  • 3 1/2 cups sifted flour
  • 1 1/2 cups sugar
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon ground allspice
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cloves
  • 1 1/2 cups chopped walnuts
  • 1 1/2 cups golden raisins
  • 1 cup vegetable oil
  • 2/3 cup milk
  • 4 eggs
  • 2 cups cooked, mashed pumpkin

Instructions

  1. Sift together flour, sugar, baking soda, ground cinnamon, salt, ground allspice, baking powder, and ground cloves.
  2. Add chopped walnuts and golden raisins to the dry ingredients and stir to coat.
  3. In a separate bowl, beat together vegetable oil, milk, and eggs.
  4. Add cooked, mashed pumpkin to the wet ingredients and mix well.
  5. Combine the wet and dry ingredients until just moistened.
  6. Pour the batter into 30 paper-lined muffin cups.
  7. Bake at 400°F (200°C) for 20 minutes or until a toothpick inserted into the center comes out clean.
