Ingredients

  • 2 c. Quaker oat bran hot cereal
  • 1/3 c. brown sugar
  • 1/4 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1 c. skim milk
  • 2 egg whites
  • 3 Tbsp. vegetable oil
  • 1 1/2 tsp. vanilla
  • 1/4 c. Quaker oats

Instructions

  1. Heat oven to 400°F. Line 12 medium muffin cups with paper baking cups.
  2. Combine oat bran, 1/3 cup brown sugar, flour, baking powder, salt, and nutmeg in a bowl.
  3. Add skim milk, egg whites, vegetable oil, and vanilla to the dry ingredients, stirring just until moistened.
  4. Fill muffin cups almost full with batter.
  5. Combine remaining brown sugar with oats and sprinkle evenly over the batter in each muffin cup.
  6. Bake for 20 to 22 minutes or until muffins are golden brown.
