Ingredients

  • 1/2 small onion, chopped
  • 1/2 green pepper, chopped
  • 2 small cans mushrooms
  • 3 eggs
  • 3/4 cup milk
  • 8 oz. Cheddar cheese, shredded
  • 6 oz. Monterey Jack, shredded
  • 5 strips bacon, fried
  • 1 tsp. nutmeg
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. parsley flakes

Instructions

  1. Combine cheeses, spices, onion, green pepper, mushrooms, eggs, and milk in a large bowl.
  2. Mix thoroughly until well blended.
  3. Divide the mixture evenly into 2 pastry-lined pie plates.
  4. Crumble bacon over the top of each quiche.
  5. Bake at 350°F (175°C) for about 50 minutes.
  6. Let stand for 5 minutes before serving.
