Ingredients

  • 16 oz. pink salmon
  • 1 egg
  • 2 Tbsp. flour
  • 1/4 c cornmeal
  • 1/3 c finely chopped onions
  • 1 tsp. baking powder

Instructions

  1. Drain and debone the pink salmon.
  2. Mix the salmon with the egg, chopped onions, flour, cornmeal, and baking powder until well combined.
  3. Shape the mixture into small balls or croquettes.
  4. Heat oil in a skillet over medium heat.
  5. Cook the croquettes in hot oil until they are browned on all sides.
  6. Drain on paper towels before serving.
