Ingredients

  • 2 small yellow onions, diced
  • 3 Tbsp. butter
  • 2 (10 1/2 oz.) cans minced clams
  • 2 c. potatoes, diced
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. milk
  • 1 c. light cream
  • 1/4 tsp. paprika

Instructions

  1. Stir-fry onions in 2 tablespoons butter in a large saucepan over moderate heat for 5 to 8 minutes.
  2. Drain the liquid from the clams into the pan and add the diced potatoes, salt, and pepper.
  3. Cover and simmer until the potatoes are nearly tender.
  4. Add the clams, milk, and light cream to the saucepan.
  5. Cover and simmer for 5 to 7 minutes, just to heat through.
  6. Add the remaining butter and stir until melted.
  7. Sprinkle with paprika before serving.
