Ingredients

  • 1/4 cup margarine or butter
  • 2/3 cup fine dry bread crumbs
  • 2 tablespoons finely chopped onion
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 3/4 cup light cream
  • 1 pound crabmeat
  • 2 hard-cooked eggs, finely chopped
  • 1 tablespoon minced parsley
  • 1/4 cup sherry

Instructions

  1. Melt margarine in a saucepan.
  2. Remove 2 tablespoons of margarine and mix with fine dry bread crumbs; set aside.
  3. Add chopped onion to the remaining margarine and sauté until tender, about 5 minutes.
  4. Remove from heat.
  5. Blend in flour, salt, and white pepper.
  6. Gradually stir in light cream and sherry.
  7. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  8. Stir in crabmeat, chopped eggs, and minced parsley.
  9. Transfer the mixture into individual scallop shells, casseroles, or a 9-inch baking dish.
  10. Top with the prepared bread crumbs.
  11. Bake at 375°F for 20 to 25 minutes, or until crumbs are lightly browned.
