Raisin-Orange Nut Bread

Ingredients

  • 1 cup raisins
  • 1 cup boiling water
  • 2 cups all-purpose flour
  • 1 cup firmly packed brown sugar
  • 1/2 cup chopped pecans
  • 1/4 cup Land O Lakes Butter, melted
  • 1 Land O Lakes Egg
  • 1 teaspoon salt
  • 2 teaspoons freshly grated orange zest
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Instructions

  1. Heat oven to 350F.
  2. Grease 8x4-inch loaf pan; set aside.
  3. Combine raisins and water in bowl; let stand 10 minutes.
  4. Stir in all remaining ingredients.
  5. Pour mixture into prepared pan.
  6. Bake 55-65 minutes or until toothpick inserted in center comes out clean.
