Ingredients

  • 1/4 cup chopped onion
  • 1 tablespoon cooking oil
  • 4 cups chicken broth
  • 1/4 cup long grain rice
  • 1/4 cup tomato puree
  • 1/4 teaspoon salt
  • dash of pepper
  • 1 cup frozen peas

Instructions

  1. In a saucepan, cook chopped onion in hot oil until tender but not brown.
  2. Stir in chicken broth, rice, tomato puree, salt, and pepper. Bring to a boil.
  3. Reduce heat, cover, and simmer for 25 minutes.
  4. Stir in frozen peas and simmer for an additional 5 minutes.
