Ingredients

  • 1 1/2 c. flour
  • 1 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 c. salad oil
  • 2 Tbsp. cold milk
  • 1 c. grated carrots
  • 2 c. chopped dates
  • 2 c. raisins
  • 2 2/3 c. water
  • 1/2 c. butter
  • 2 tsp. ground cinnamon
  • 2 tsp. ground cloves
  • 2 tsp. ground nutmeg
  • 4 c. plain whole wheat or unbleached flour
  • 3 tsp. baking powder
  • 2 tsp. baking soda

Instructions

  1. Place the first eight ingredients (flour, sugar, salt, salad oil, cold milk, grated carrots, chopped dates, and raisins) in a large pan and bring to a boil slowly for 5 minutes.
  2. Cool completely.
  3. In a separate bowl, stir together the plain whole wheat or unbleached flour, baking powder, baking soda, salt, and chopped nuts.
  4. Add the dry ingredients to the cooled wet mixture and stir to blend thoroughly.
  5. Stir in vanilla flavoring.
  6. Pour the batter into a greased and floured large Bundt pan.
  7. Bake at 350°F (175°C) for 1 hour.
  8. Frost with a cream cheese and honey mixture, if desired.
