Ingredients

  • 2 or 3 red or yellow yams
  • 1 1/2 cups sugar
  • 3/4 cup water
  • 8 eggs
  • 2 egg yolks
  • 1 can (14 oz.) Eagle Brand sweetened condensed milk
  • 1 cup heavy cream
  • 1 cup half and half
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 325°F.
  2. Scrub the yams and bake for 1 to 1 1/2 hours, until they are soft.
  3. Remove the yams from the oven and peel them.
  4. Cut the yams into chunks and puree in a blender or food processor until smooth.
  5. Measure out 1 1/2 cups of yam puree and set aside to cool.
  6. In a saucepan, combine 1 1/2 cups sugar and 3/4 cup water, then cook over medium heat until the sugar dissolves and the syrup thickens slightly.
  7. In a large bowl, beat the eggs and egg yolks until well combined.
  8. Add the sweetened condensed milk, heavy cream, half and half, vanilla extract, and yam puree to the eggs, mixing until smooth.
  9. Pour the mixture into a caramel-lined baking dish or individual ramekins.
  10. Bake in the preheated oven for about 60-90 minutes, or until the flan is set and a knife inserted in the center comes out clean.
  11. Allow to cool before refrigerating. Serve chilled.
