- Preheat the oven to 325°F.
- Scrub the yams and bake for 1 to 1 1/2 hours, until they are soft.
- Remove the yams from the oven and peel them.
- Cut the yams into chunks and puree in a blender or food processor until smooth.
- Measure out 1 1/2 cups of yam puree and set aside to cool.
- In a saucepan, combine 1 1/2 cups sugar and 3/4 cup water, then cook over medium heat until the sugar dissolves and the syrup thickens slightly.
- In a large bowl, beat the eggs and egg yolks until well combined.
- Add the sweetened condensed milk, heavy cream, half and half, vanilla extract, and yam puree to the eggs, mixing until smooth.
- Pour the mixture into a caramel-lined baking dish or individual ramekins.
- Bake in the preheated oven for about 60-90 minutes, or until the flan is set and a knife inserted in the center comes out clean.
- Allow to cool before refrigerating. Serve chilled.
