Creamy Reuben Soup combines corned beef, sauerkraut, and Swiss cheese in a hearty, flavorful dish perfect for warming up and satisfying fans of classic deli flavors.

Ingredients

  • 1/2 cup onion, chopped
  • 1/4 cup celery, chopped
  • 3 tablespoons butter
  • 1/4 cup flour
  • 3 cups water
  • 4 teaspoons instant beef bouillon or 4 beef bouillon cubes
  • 1/2 pound corned beef, shredded
  • 1 cup sauerkraut, well drained
  • 3 cups half and half
  • 3 cups shredded Swiss cheese

Instructions

  1. In a large saucepan, cook chopped onion and celery in butter until tender.
  2. Stir in flour until smooth.
  3. Gradually stir in water and bouillon and bring to a boil.
  4. Reduce heat; simmer, uncovered, for 5 minutes.
  5. Add shredded corned beef, well-drained sauerkraut, half and half, and 1 cup of shredded Swiss cheese.
  6. Cook for 30 minutes or until slightly thickened, stirring frequently.
  7. Ladle the soup into 8 ovenproof bowls.
  8. Top each with a slice of bread and 1/4 cup of shredded Swiss cheese on top of the bread.
  9. Place in oven under broiler until the cheese melts and browns lightly.
