Ingredients

  • 6 chicken breast halves, boned and skinned
  • 3 egg whites, lightly beaten
  • 3/4 cup bread crumbs
  • 2 teaspoons olive oil
  • 3 ounces part skim mozzarella cheese, sliced
  • 1 tablespoon cornstarch
  • 1 1/2 cups evaporated skim milk
  • 2 ounces freshly grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Dip chicken breast halves into beaten egg whites and coat with bread crumbs.
  2. Heat 1 teaspoon of olive oil in a frying pan over medium heat. Add half the chicken and brown lightly on both sides. Remove from pan and place in a baking dish.
  3. Repeat with remaining oil and chicken. Top with slices of mozzarella cheese.
  4. Dissolve cornstarch in 3 tablespoons of evaporated milk.
  5. Heat remaining evaporated milk, Parmesan cheese, parsley, and pepper in a saucepan.
  6. Add the cornstarch mixture to the saucepan and cook until the sauce thickens.
  7. Pour the sauce over the chicken and bake at 350°F for 25 minutes.
  8. Serve immediately. The dish can be prepared ahead, refrigerated for a day or two, then baked for 30 minutes.
