Ingredients

  • 1/2 cup finely chopped mushrooms, drained

  • 2 tablespoons flour

  • 5 ounces sharp cheddar cheese, shredded
  • 6 or 7 boned chicken breasts
  • 2 slightly beaten eggs

Instructions

  2. Blend in flour and stir in light cream or milk.
  3. Add salt and cayenne pepper, cook and stir until mixture is very thick.
  4. Add shredded cheddar cheese and cook over low heat until melted.
  5. Turn mixture into a pie plate, cover and chill for 1 hour.
  6. Cut mixture into 6 or 7 pieces and shape into short sticks.
  7. Remove skin from chicken breasts and place each piece, boned side up, between clear plastic wrap, overlapping where meat is split.
  8. Pound out from the center with a wood mallet to form cutlets less than 1/4 inch thick.
  9. Peel off wrap and sprinkle with salt.
  10. Place a cheese stick on each chicken piece, roll up, tucking in sides as for a jelly roll.
  11. Press to seal well and secure with toothpicks.
  12. Dust rolls with flour, dip in beaten eggs, then coat with bread crumbs.
  13. Cover and chill thoroughly for at least 1 hour or overnight.
  14. Before serving, fry rolls in deep fat at 375°F for 5 minutes or until golden brown.
  15. Drain on paper towels.
  16. Bake in a shallow baking dish at 325°F for 30-35 minutes.
