Romany Creams are delightful coconut and cocoa filled biscuits with a rich chocolate spread, perfect for tea time, sharing with friends, or satisfying a sweet craving.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 cups coconut
  • 1/4 cup boiling water
  • 1/2 pound margarine
  • 1 cup castor sugar
  • 2 tablespoons cocoa
  • milk chocolate

Instructions

  1. Cream the margarine and castor sugar until light and fluffy.
  2. Add the flour, baking powder, salt, and coconut; mix well.
  3. Dissolve the cocoa in boiling water and add to the mixture, stirring until combined.
  4. Drop teaspoonfuls of the mixture onto a greased baking tray.
  5. Bake in a moderate oven for 6 minutes or until lightly golden.
  6. Allow the biscuits to cool completely.
  7. Melt the milk chocolate over boiling water or in a microwave at defrost setting.
  8. Spread the melted chocolate between two biscuits to form sandwiches.
