  • 1/2 tsp. pepper
  • 4 chicken breasts
  • 1/2 c. orange juice
  • 3/4 c. flour
  • 1 1/2 tsp. salt
  • 1/2 tsp. ginger

Instructions

  1. Combine dried rosemary, dry vermouth, and water; bring to a boil and set aside.
  2. Mix margarine, orange juice concentrate, vermouth, salt, and pepper; set aside.
  3. Wash and pat dry chicken breasts.
  4. Dip chicken into orange juice, then into a flour mixture (flour, salt, ginger, and pepper).
  5. Brown the chicken in margarine and oil.
  6. Add rosemary seasoning; simmer for 15 to 20 minutes, or until the liquid evaporates.
  7. Cook rice; blend with peas and half of the margarine mixture.
  8. Spread rice on the bottom of an ovenproof dish.
  9. Arrange the browned chicken on top of the rice.
  10. Cover with the remaining margarine mixture.
  11. Bake at 375°F for 40 minutes, covered.
  12. Remove cover and cook for an additional 10 minutes.
