Round Oatmeal Bread

Ingredients

  • 1 1/4 quick cooking oats, uncooked
  • 1/2 c. molasses
  • 1/4 c. shortening
  • 1 1/2 tsp. salt
  • 1 2/3 c. boiling water
  • 2 pkg. dry yeast
  • 1/2 c. warm water
  • 2 eggs, beaten
  • about 5 c. flour
  • 2 Tbsp. melted butter
  • 1 Tbsp. quick oats to sprinkle on top of dough

Instructions

  1. Combine first 5 ingredients, mixing well.
  2. Cool to lukewarm. Dissolve yeast in warm water in large bowl.
  3. Let stand 5 minutes. Add oats mixture, eggs and 3 cups flour, mix well.
  4. Stir in enough of remaining flour to form soft dough.
  5. Knead 5 minutes, divide into 2 loaves in 2 well-greased 10-inch pie plates.
  6. Cover, let rise about 1 hour.
  7. Sprinkle oats on top after gently brushing with butter.
  8. Bake at 350° for 45 minutes.
