Ingredients

  • 4 lb. chicken wings or drumsticks
  • 1/2 cup soy sauce
  • 1/4 cup sherry or Madeira
  • 1/3 cup hoisin sauce
  • 1/4 cup cider vinegar
  • 1/2 cup honey
  • 1/4 cup orange marmalade
  • 6 scallions
  • 2 cloves garlic
  • 2 tablespoons green pepper
  • 1 teaspoon grated lemon rind
  • 1 teaspoon grated orange rind

Instructions

  1. Combine soy sauce, sherry or Madeira, hoisin sauce, cider vinegar, honey, orange marmalade, minced scallions, minced garlic, minced green pepper, grated lemon rind, and grated orange rind in a saucepan; bring to a boil and simmer for 5 minutes.
  2. If using chicken wings, cut off and discard tips and separate wings at joints.
  3. If using drumsticks, cut or snip at the bottom and push meat up to form a 'drumette' with handle if desired.
  4. Place chicken in a glass or ceramic bowl; pour the seasoning mixture over the chicken and mix well to coat.
  5. Marinate the chicken in the refrigerator overnight.
  6. Drain and save the marinade for serving or further use.
