Ingredients

  • 1 cup cooking oil
  • 3 eggs
  • 2 cups sifted flour
  • 1/2 teaspoon salt
  • 1 cup pecans
  • 1 cup canned figs diced
  • 1 1/2 cups sugar
  • 1 cup buttermilk
  • 1 teaspoon soda

Instructions

  1. Mix oil and sugar in a bowl; add beaten eggs, then alternately add buttermilk and sifted flour to the mixture.
  2. Combine remaining ingredients: pecans, diced figs, salt, soda, nutmeg, baking powder, cinnamon, allspice, and vanilla, then fold into the batter.
  3. Pour batter evenly into two greased 9-inch pans or a 11 x 9-inch pan.
  4. Bake at 375°F for 25 minutes or until a toothpick inserted into the center comes out clean.
