Ingredients

  • 2 1/4 cups Quaker oat bran
  • 3 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 cup raisins
  • 1/2 cup canned pumpkin
  • 1/2 cup frozen pineapple juice concentrate
  • 3/4 cup milk
  • 2 tablespoons vegetable oil
  • 2 egg whites

Instructions

  1. Mix all dry ingredients together in a bowl.
  2. Mix all other ingredients in a separate bowl.
  3. Combine the dry and wet ingredients and blend until well mixed.
  4. Grease muffin tins or line with baking cups.
  5. Divide the batter evenly among muffin cups.
  6. Bake at 425°F for 17 minutes or until a toothpick inserted into the center comes out clean.
